It’s hard to be a working mom with a lot to plan, to deal and to take care. Sometimes I wish that my day had more than 24 hours. In fact, I’m going to bed early and I get up at 6 am every day. Yes, it’s true! Even on weekends, I wake up early too. So I think my body is saying: “Hey, calm down and rest a little bit!”
Why I’m saying this? Because in the last days I’m feeling so tired. In the other day, after I came home from work, while I was helping my youngest boy with his homework, I was thinking (at the same time) what I was supposed to make for our dinner.
Then occurred to me that it was a while since I done chicken wings for the last time. In my home, everybody loves chicken wings and a few ingredients that I had in my kitchen I had my problem solved! I make this wonderful spicy and sweet chicken wings…

Ok, I must confess that my husband went to the supermarket to buy a package of chicken wings while I was helping my son with his homework.
These spicy chicken wings are perfect as a family dinner, served with veggies or rice if you’re not in a low carb diet, or as an appetizer in a party. They are really simple to make. Simply mix the seasoning with the wings and bake them in the oven. It took me only 10 minutes to prepare. You will need to flip the wings a couple of times.

I prefer baked wings rather than fried because bake it’s healthier than fried. Actually, I’m not a big fan of fried food.
To make the wings a little less spicy cut the spicy season in half.

  • 3 pounds Chicken Wings
  • 4 tbsp melted butter or ghee for paleo
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp Salt
  • 1/3 tsp Black Pepper
  • 1/3 tsp cayenne pepper
  • 1/2 Chilli Pepper
  • 1 tsp ginger powder
  • 1 tbsp swerve, brown sugar
  • 1 lemon juice
  • 1 tbsp soy sauce
  • 1 lime juice
  • 1/2 tsp fresh parsley chopped

Instructions
  1. Preheat the oven to 200ºC / 400ºF. Place lemon slices on a baking sheet. Dry the chicken wings thoroughly with paper towels, pressing down hard to remove as much excess moisture as possible.
  2. Place the chicken wings in a large bowl. Set aside.
  3. In a small bowl combine the melted butter or ghee, brown sugar (swerve), ginger powder, soy sauce, lemon and lime, garlic cloves, chili pepper, salt, black and cayenne pepper.
  4. Pour this mixture over the wings and using your hands, toss well to coat. Spread the wings in a single layer on the prepared baking sheet.
  5. Bake the wings until browned and crisp (45-50 minutes), using tongues to flip them over halfway.
  6. Carefully remove wings from the oven and transfer them to a large serving platter. Sprinkle the wings with parsley. Serve with lemon and lime wedges.
