No-bake coconut bars made with homemade condensed milk are an easy, healthy and keto delicious dessert that can satisfy your craving for sweet!
When it comes to desserts, I love easy recipes. But I have to admit that I like them fancy. On weekdays I don´t have much time and patience to prepare something fancy. That’s why I love this recipe. It´s really easy and quick to make and I think that they are perfect for kids.
This dessert is one that I love to make because it requires ingredients that usually I have in my pantry and in the other hand I don´t need to use a mixer! You can totally make these by hand, with a whisk, and a wooden spoon. These coconut bars do not require any baking, it comes together with only a few ingredients and most importantly, it is intensely, supremely satisfying.
I like to make these coconut bars for special occasions, but they’re really great for even a casual weekday.
This recipe contains homemade condensed milk. Condensed milk is a mixture of milk and sugar, which is simmered until it is reduced by about 1/3 and thickens. But you can do it sugar-free and dairy-free, and it’s easier than you think. You will only need two ingredients: coconut milk and low-carb sweetener. If you’re not on a keto diet you can use one can of sweetened condensed milk.
In my family, we have those who love coconut desserts and those that just ate them… I and my youngest son love coconut. In the other side, my husband and my oldest son aren’t a big fan of it. So I must say that I made these bars because of my little boy. He loves to eat them as a school snack.
The salted caramel that you see in the pictures is optional. This was my son’s request. It’s not sugar-free and you don’t need to drizzle your coconut bars with it.
Coconut bars freeze well – they even taste greatly frozen! You can store them in the fridge or even in an airtight jar at room temperature.

- 800 g Unsweetened Coconut Milk
- 2 tbsp powdered erythritol
- 1 tsp Vanilla Extract
- 200 g dark chocolate 90% cocoa
- 2 tbsp Heavy Cream
- 1 tbsp butter

- Pour all ingredients in a pot and bring to the boil.
- Turn the heat down to medium and let it bubble away until the mix has reduced to almost 1/3 of the original amount, stirring regularly. The condensed milk is ready when it coats the back of a spoon and its colour begins to darken slightly.
- Pour the chocolate, heavy cream and butter in a bowl. Microwave it for 1 - 2 minutes, opening the door and stirring occasionally.
- Drizzle the coconut layer wiyh this chocolate ganache.
- Place the tray in the fridge for 15 minutes so it firms up before cutting.
- Wet your knife before you cut and clean it after each cut to remove any coconut shreds that got stuck on it.
- Use a dark chocolate containing 90% cocoa solids. It is very low in sugar. Or you can even go for sugar-free chocolate.
- The coconut bars you see in the photos are drizzled with salted caramel which is not low carb. As I said before, this was a request from my son. So, you don´t need to use it.
