Today I’m going to share with you this low carb and keto muffins recipe that I’ve made last weekend for our breakfast. No matter if you are relaxing at home on the weekend or rushing to work on a weekday, a muffin can be such a satisfying breakfast! When you need to run out the door you have these low carb and healthy muffins. They can package easily in a small container or a plastic ziplock bag if you decide to eat them at work. Or for your kids to take to school.

They are perfect to satisfy a sweet craving and they are ridiculously easy to make: it takes only 5 minutes to prepare! You only need one bowl to make these easy muffins made with orange zest and juice. Ah, yes and of course, for a Keto recipe, you will need to use almond flour.
All you need is to combine all ingredients in a bowl and beat it with a stand mixer like this one. Then divide the batter between 12 muffin cups and bake. See how simple and quick they are to make?
I have something for you to keep in mind: if you over mix, the muffins will be heavy and flat.

- 1 1/4 cup almond flour
- 1/2 cup Unsalted Butter melted (but not hot)
- 3 larged eggs
- 1 Orange zest and juice
- 1 tsp baking soda
- 3/4 cup low carb sweetener I prefer Swerve
- 1/4 cup coconut flour
Ingredients

- Preheat the oven to 350.º F or 175.º C.
- Mix together all dry ingredients to a bowl.
- Then put the wet ingredients in a large mixing bowl. Pour the dry ingredients into the wet and mix it very well.
- Pour into muffins pan and bake for 15 - 20 minutes.
For PALEO or DAIRY-FREE you can replace the butter with coconut oil.
