When it comes to desserts, it just may be my favorite flavor. Next to chocolate anyway. I love the lemony flavor on cakes, and I think that my kids too.
In the other day, me, my husband and my kids were watching TV sitting on our couch. Surprisingly, all of us like to watch food programs and we saw a muffins recipe. My oldest son said to me: “Mummy it has been a long time since you made muffins”
In one minute I was in my kitchen opening my fridge’s door and began to take some ingredients to the table. And when I saw the lemons, I started imagining in my head these lemon poppyseeds.
They are easy to make… really they are, and insanely delicious, perfect for your family breakfast or for a snack.
You will love the moist texture and zesty flavor of them. They are sweet, tangy and lemony. The Greek yogurt adds protein and a lot of moisture. The poppy seeds give a pleasant crunch to these aromatic and fluffy muffins. For me, there’s something special for the lemon flavor. - eggs
- Greek yogurt
- lemon zest and juice
- poppyseeds
- almond flour
- coconut flour
- melted butter
- low carb sweetener (I used Swerve)
- baking powder

- 2 eggs
- 1/2 cup greek yogurt
- 1/3 cup melted butter
- 1 tbsp lemon zest
- 1 lemon juice
- 1/3 cup swerve or any low carb sweetener
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
- 2 tbsp poppyseeds
Ingredients

- Preheat the oven at 180ºC or 375ºF. Grease a muffin baking tin.
- In a bowl, combine all ingredients by the order described above.
- Spoon mixture into prepared muffin tins until each is about 2/3 of the way full.
- Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before serving.
