Salmon is seasoned with lemon and lime juice and you can serve it with whatever veggies you have on hand. This recipe doesn’t require many ingredients and I think you have all of this in your kitchen.
I don’t know if I’ve already told you that I have a small vegetable garden where I plant some of the vegetables that we consume in our home. These snap peas that I prepare as a side dish for the salmon are from my garden and they taste amazing. They are so tender and they have a natural sweetness that shines through this recipe. I´m going to give you a tip that you can not forget: don’t over-cooking the pea pods as they retain their crunch and flavor.

- 4 skinless salmon fillets
- 1 lemon juice
- 1 lime juice
- pinch of salt
- 1 tbsp ground black pepper
- 3 cups fresh snap peas
- 2 tbsp olive oil
- 1/2 tsp Salt
- 1/4 tsp ground black pepper
- 1 garlic clove minced

- Preheat oven to 200ºC (400ºF).
- Season the salmon with lemon and lime juice, black pepper, and drizzle with a pinch of salt.
- Place the salmon fillets into a baking tray grazed with olive oil and bake for 10-13 minutes or until salmon is cooked to your liking.
- While salmon is in the oven, start to prepare the snap peas.
- Trim the stems from the pea pods.
- Preheat the olive oil in a large skillet over medium-high heat for 2 minutes. Add the peas, salt, and pepper to the skillet. Stir to combine.
- Cook for 4-5 minutes, stirring occasionally.
- Reduce the heat to low. Stir in the garlic. Cook for 1-minute stirring often. Remove from heat.
- Remove salmon from the oven and serve with sauteed sugar snap peas.
