- Monk fruit sweetener powdered
- Lemon juice
- Zest of one lemon
- Butter
How to make Keto Sugar-Free Lemon Curd
- In a small saucepan, whisk eggs until foamy.
- Whisk in monk fruit sweetener substitute, salt, and lemon juice until well combined.
- Place saucepan over medium-low heat and whisk constantly until thickened (coats the back of a spoon).
- Remove from heat.
- Add butter 1 T at a time, whisking to combine after each addition.
- Pour into a bowl and place plastic wrap on the surface to prevent a skin from forming.
- Refrigerate for at least 1 hour to chill.
