Best Pork Loin Roast Recipe

Ingredients
  • 3.5-4lb pork loin
  • 1/2cup dry white wine
  • 1/4cup olive oil
  • 3 garlic clovesminced
  • 2tsp fresh rosemary
  • 1tsp kosher salt
  • 1tsp smoked paprika
  • 1tsp blak pepper
  • 1/2tsp cayenne pepper
  • 2 onionssliced
Instructions
  1. In a medium mixing bowl whisk together the marinade ingredients: white wine, smoked paprika, cayenne and black pepper, garlic cloves, salt, and rosemary.
  2. Add pork loin to a large zip-top bag and pour the marinade mixture into the bag. Let marinate for at least 3 hours or overnight.
  3. When ready to cook, preheat oven to 350°F and place onions and pork loin with the marinade into a 9×13 casserole dish. Drizzle with olive oil.
  4. Bake uncovered for about 1 to 1-½ hours making sure to baste the pork every 30 minutes. The pork is fully cooked when the middle of the roast registers 140°F.
  5. Remove from the oven and let rest for at least 5 – 10 minutes before slicing.
