Ingredients
  • 2 boneless, skinless chicken breasts
  • 2tbsp olive oil
  • 1/2tsp dried oregano
  • 1/2tsp dried basil
  • 1tsp Salt
  • 1/2tsp Black Pepper
  • 1 garlic clovecrashed
  • 1cup cherry tomatoes
  • 1tbsp balsamic vinegar
  • 1 fresh mozzarella cheesesliced
  • 1tbsp fresh chopped basilto garnish
  • 1/2 cup dry white wine
Instructions
  1. Preheat oven to 220°C | 430°F
  2. Place chicken breasts in a bowl. Season with lemon juice, oregano, basil, salt, and pepper . Rub seasoning all over each breast. Let marinate for 1 hour or 2.
  3. Preheat oven to 220ºC / 430º F
  4. Seal the chicken breast in a frying pan with two tablespoons of olive oil and a crushed garlic clove.
  5. Pour the chicken into a baking sheet with balsamic vinager and white wine.
  6. Arrange halved tomatoes around the chicken.
  7. Bake in the oven for 20-25 minutes (depending on the thickness of your chicken breasts). Sprinkle with sliced mozzarella cheese and grill for 4-5 minutes, or until cheese is melted.
  8. Garnish with basil and with another half of cherry tomatoes.
