Ingredients
Brownies
  • 6 eggs
  • 3/4cup granulated light sugar
  • 1/2cup brown sugar
  • 3/4cup Unsalted Butter
  • 1cup semi-sweet chocolate morsels
  • 1tsp Vanilla Extract
  • 3/4cup unsweetened cocoa powder
  • 1cup all-purpose flour
  • 1/2tsp baking powder
  • 1/2tsp Sea Salt
Ganache
  • 2cups white chocolate chips
  • 1/2cup heavy whipping cream
  • 20 oreo
  • 1/4tsp peppermint extract
  • 1/4tsp green food coloring
  • 2tbsp red hot candies
Instructions
  1. Preheat oven to 175°C | 350°F. Lightly grease an 8×12-inch baking pan with cooking oil spray. Line with parchment paper (or baking paper); set aside.
  2. Microwave butter with chopped chocolate in a medium-sized bowl. Whisk every 30 seconds to combine.
  3. In a bowl beat the eggs with two sugars (light and brown) and vanilla extract for 5 minutes.
  4. Add the melted chocolate and butter into the egg mixture.
  5. Sift in flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
  6. Pour batter into prepared pan. Bake for 25-30 minutes for just under-done brownies (fudgier texture) or until the center of the brownies no longer jiggles and is JUST set to the touch. OR 35-40 minutes if you like your brownies well set and firm.
  7. After the brownies have cooled, prepare the mint ganache topping. In a heat-safe bowl or double boiler over simmering water, add white chocolate and heavy cream. Stir until the chocolate has fully melted.
  8. Remove from heat and stir in peppermint extract and green food coloring.
  9. Pour ganache over brownies and top immediately with chopped Oreos and red hot candies. Allow to set, for about one hour. Cut and enjoy.
