Ingredients
  • 3cups all-purpose flour
  • 1cup Granulated Sugar
  • 1/2cup brown sugar
  • 2tsp cinnamon
  • 2tsp baking powder
  • 1/2tsp Sea Salt
  • 2 large eggs
  • 3/4cup greek yogurt
  • 1/2cup vegetable oil
  • 2tsp Vanilla Extract
  • 2cups peeled and grated apples
Instructions
  1. Preheat the oven to 375ºF.
  2. Grate about 1 & ½ apples. Set aside.
  3. In a mixing bowl combine the flour, granulated sugar, brown sugar, cinnamon, baking powder, and salt. Stir with a spoon to combine and set aside.
  4. In a larger mixing bowl combine the eggs, Greek yogurt, vegetable oil, vanilla extract, and grated apples. Stir to combine with a fork or spatula.
  5. Gradually mix in the dry ingredients into the wet ingredients.
  6. Bake for 20 minutes at 375ºF or until a toothpick inserted in the center comes out clean. Allow the muffins to cool in the pan for 15 minutes before removing.
