Ingredients
The Frosting
  • 1cup almond flour
  • 1tsp cinnamon
  • 1/2cup low carb sweetener
  • 1/8tsp Sea Salt
  • 4tbsp butter
The cake
  • 2cup almond flour
  • 1tsp bakigng powder
  • 1/2tsp baking soda
  • 1/4tsp cinnamom
  • 3/4cup low carb sweetener
  • 1/2cup greek yogurtor sour cream
  • 2tbsp oil
  • 2tsp Vanilla Extract
  • 2 eggs
  • 1cup blueberries
Instructions
  1. Preheat oven to 350°. Butter or oil 9X9 inch pan.
  2. Mix the filling ingredients until crumbly. Set aside.
  3. Mix almond flour, baking powder, baking soda, cinnamon, salt, and sweetener (if using a powder). Set dry ingredients aside.
  4. Blend the sour cream (or yogurt), oil, extracts, and eggs and mix well.
  5. Add the mixed dry ingredients and blend well.
  6. Spread the cake layer in the pan. Then sprinkle the blueberries on the cake and the streusel on the top of that.
  7. Bake for 30-40 minutes or until toothpick not inserted into center comes out clean. Cool and slice.
