Keto Low Carb Strawberry Chessecake Mousse – Easy Recipe

Ingredients
  • 1 1/2cup fresh strawberries
  • 1cup heavy whipping cream
  • 8oz full-fat organic grass-fed cream cheese
  • 1/2cup powdered sweetener
  • 1tsp Vanilla Extract
  • 1 1/2tsp powdered gelatinunflavored
  • 4tbsp cold water
Instructions
  1. Start by cleaning the strawberries and chop them into small pieces. Use a blender to puree the berries. Set aside.
  2. Add 4 tbsp cold water to a small saucepan. Sprinkle the powdered gelatin over the water and allow it to “bloom” for 5 minutes.
  3. Beat in the cream cheese until it’s smooth. Add powdered sweetener and vanilla extract.
  4. Add heavy cream and beat until it holds stiff peaks then add the strawberry puree and mix.
  5. Microwave gelatine for about 30 seconds. Add gelatin to the strawberry mixture and beat it until well combined.
  6. Serve in glasses and garnish with a few extra pieces of strawberry. Refrigerate or freeze as you like.
