Ingredients
  • 6 egg yolks
  • 3/4cup monk fruit sweetener powdered
  • 3/4cup lemon juice
  • zest of one lemon
  • 1/2cup butter
Instructions
  1. In a small saucepan, whisk eggs until foamy.
  2. Whisk in monk fruit sweetener substitute, salt, and lemon juice until well combined.
  3. Place saucepan over medium-low heat and whisk constantly until thickened (coats the back of a spoon).
  4. Remove from heat. Add butter 1 T at a time, whisking to combine after each addition.
  5. Pour into a bowl and place plastic wrap on the surface to prevent a skin from forming. Refrigerate for at least 1 hour to chill.
