Keto & Vegan Mint Chocolate Chip Ice Cream
Homemade mint chocolate chip ice cream is a classic summer treat. It’s also dairy-free, gluten-free, vegan and paleo-friendly!

Ingredients
  • 2 avocados
  • 1can coconut milkfull fat
  • 1/2cup powdered erythritol
  • 1/2 tsp mint extract
  • 1/2cup mini chocolate chips
Instructions
  1. In a blender combine all ingredients (except chocolate chips) until smooth. Then stir in chocolate chips.
  2. Mix on high 2-3 minutes with a hand mixer until it becomes stiff and fluffy.
  3. Fold in the chocolate chips until thoroughly mixed.
  4. Pour ice-cream into a metal bowl and chill in freezer overnight or until it reaches ice-cream consistency.
