Preheat the waffle iron to high heat. Grease lightly (I usually coconut oil).
Add all the ingredients to a blender and blend them on high speed for about 1 minute until all the ingredients get nice and smooth. If you don’t have a blender, you can mix it manually in a small bowl on for a minute or two.
Pour half the mixture (about 3/4 cup) onto the lightly greased waffle iron. Close and cook until steam stops coming out for about 3/4 minutes.
Unplug and let cool slightly in the waffle iron to make the waffle easier to remove. It will crisp up as it goes from hot to warm.
