Ingredients

chicken drumsticks
bone-in and skin-in
4
tbsp
olive oil
1
tbsp
sweet paprika
1/4
cup
chicken broth
Salt
pepper

cup
cherry tomatoes
2
carrots
diced into 1 1/4-inch chunks
1
cup
celery
1
medium zucchini
potatoes
peeled and diced into 3/4-inch cubes
red pepper
1
tsp
fresh thyme
chopped
1
tsp
fresh rosemary
chopped
Instructions
Preheat oven to 200°C / 400°F. Lightly grease a baking tray/sheet with cooking oil spray, or a light coating of oil. Set aside.
Add chicken drumsticks and all the veggies to the sheet pan.
Drizzle everything with olive oil, sprinkle with thyme, sweet paprika and rosemary. Then season with salt and pepper to taste and toss to coat.
Roast in preheated oven 15 minutes. Then remove and toss.
Return to oven and continue to roast until veggies are tender, about 15 minutes longer. Serve warm.
