Sheet Pan Chicken & Veggies
This oven-baked chicken with veggies sheet pan is a healthy dinner that comes together so quickly and the taste is absolutely incredible!

  • 12 chicken drumsticksbone-in and skin-in
  • 4tbsp olive oil
  • 1tbsp sweet paprika
  • 1/4 cup chicken broth
  • Salt
  • pepper
  • 1cup cherry tomatoes
  • 2 carrotsdiced into 1 1/4-inch chunks
  • 1cup celery
  • 1 medium zucchini
  • potatoespeeled and diced into 3/4-inch cubes
  • red pepper
  • 1tsp fresh thymechopped
  • 1tsp fresh rosemarychopped
  1. Preheat oven to 200°C / 400°F. Lightly grease a baking tray/sheet with cooking oil spray, or a light coating of oil. Set aside.
  2. Add chicken drumsticks and all the veggies to the sheet pan.
  3. Drizzle everything with olive oil, sprinkle with thyme, and rosemary. Then season with salt and pepper to taste and toss to coat.
  4. Roast in preheated oven 15 minutes. Then remove and toss.
  5. Return to oven and continue to roast until veggies and apples are tender, about 15 minutes longer. Serve warm.
