Ingredients
  • 2 1/4cup all-pupose flour
  • 1/2tsp baking soda
  • 1/2tsp baking powder
  • 1/4tsp Salt
  • 3/4cup Unsalted Butterat room temperature
  • 1 1/4cup Granulated Sugardivided
  • 1 large egg
  • 1 egg yolk
  • 1 fresh lemon juice
  • 2 large lemons zest
  • 1tsp Vanilla Extract
Instructions
  1. Preheat oven to 350°F (175°C). Line 2 baking sheets with parchment.
  2. Whisk flour, baking soda, baking powder, and salt together.
  3. Rub lemon zest into 1 cup of sugar with your fingers to release the oils — this is the key step!
  4. Beat butter and lemon sugar until pale and fluffy, about 3–4 minutes.
  5. Add egg, egg yolk, lemon juice, and vanilla. Beat until smooth.
  6. Mix in flour mixture on low speed until just combined.
  7. Scoop into 1½-inch balls and roll each in remaining ¼ cup sugar.
  8. Space 2 inches apart on baking sheets and flatten slightly with your palm.
  9. Bake 10–11 minutes — edges set, centers look just done. Don’t overbake!
