These homemade turnovers are made with frozen puff pastry which makes them so easy and quick to make. The richness of the egg cream makes them unforgettable!!

Ingredients

sheet puff pastry

eggs yolks

tbsp
water

Instructions
Preheat the oven at 185ºC / 365ºF.
Line your baking sheet with parchment paper. I use the puff pastry parchment paper.
Cut each piece of dough into eight triangles.
Bake for 20 minutes or until pastry is puffed and golden brown.
Meanwhile, star making the cream. In a heavy saucepan over medium heat, dissolve the sugar in the water. Allow cooling.
With an electric or hand-beater, beat the yolks until they are thick and light yellow. Continuing to beat them, slowly pour in the sugar syrup.
Return the egg and sugar mix to the saucepan, and stirring constantly, heat over low heat until thickened enough.
Top each triangle with the egg cream.
