  • 4 skinless salmon fillets
  • 1 lemon juice
  • 1 lime juice
  • pinch of salt
  • 1 tbsp ground black pepper
Sauteed Snap Peas
  • 3 cups fresh snap peas
  • 2 tbsp olive oil
  • 1/2 tsp Salt
  • 1/4 tsp ground black pepper
  • 1 garlic clove minced

Instructions
Salmon
  1. Preheat oven to 200ºC (400ºF).
  2. Season the salmon with lemon and lime juice, black pepper, and drizzle with a pinch of salt.
  3. Place the salmon fillets into a baking tray grazed with olive oil and bake for 10-13 minutes or until salmon is cooked to your liking.
Sauteed Snap Peas
  1. While salmon is in the oven, start to prepare the snap peas.
  2. Trim the stems from the pea pods.
  3. Preheat the olive oil in a large skillet over medium-high heat for 2 minutes. Add the peas, salt, and pepper to the skillet. Stir to combine.
  4. Cook for 4-5 minutes, stirring occasionally.
  5. Reduce the heat to low. Stir in the garlic. Cook for 1-minute stirring often. Remove from heat.
  6. Remove salmon from the oven and serve with sauteed sugar snap peas.
