- 6 egg yolks
- 3/4 cup monk fruit sweetener powdered
- 3/4 cup lemon juice
- zest of one lemon
- 1/2 cup butter

Instructions
- In a small saucepan, whisk eggs until foamy.
- Whisk in monk fruit sweetener substitute, salt, and lemon juice until well combined.
- Place saucepan over medium-low heat and whisk constantly until thickened (coats the back of a spoon).
- Remove from heat. Add butter 1 T at a time, whisking to combine after each addition.
- Pour into a bowl and place plastic wrap on the surface to prevent a skin from forming. Refrigerate for at least 1 hour to chill.
