  • 1/4 cup coconut flour
  • 1 tsp baking powder

Instructions
  1. Chop the berries finely: You don’t want big chunks of berry in these bars as it makes them harder to cut. And chopping them finely allows for better distribution throughout the blondies.
  2. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  3. In a large mixing bowl, whisk together the melted butter and erythritol until well combined.
  4. Add the eggs and vanilla extract, mixing until smooth. Add chopped strawberries.
  5. In a separate bowl, mix the almond flour, coconut flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Pour the blondie batter into the prepared baking pan, spreading it evenly with a spatula.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the blondies to cool completely in the pan before lifting them out using the parchment overhang. Cut into squares and serve.
