Ingredients
- 1 1/2 cup fresh strawberries
- 1 cup heavy whipping cream
- 8 oz full-fat organic grass-fed cream cheese
- 1/2 cup powdered sweetener
- 1 tsp Vanilla Extract
- 1 1/2 tsp powdered gelatin unflavored
- 4 tbsp cold water

Instructions
- Start by cleaning the strawberries and chop them into small pieces. Use a blender to puree the berries. Set aside.
- Add 4 tbsp cold water to a small saucepan. Sprinkle the powdered gelatin over the water and allow it to "bloom" for 5 minutes.
- Beat in the cream cheese until it's smooth. Add powdered sweetener and vanilla extract.
- Add heavy cream and beat until it holds stiff peaks then add the strawberry puree and mix.
- Microwave gelatine for about 30 seconds. Add gelatin to the strawberry mixture and beat it until well combined.
- Serve in glasses and garnish with a few extra pieces of strawberry. Refrigerate or freeze as you like.
