- 1 sheet puff pastry
- 6 eggs yolks
- 6 tbsp water
- 6 tbsp sugar

Instructions
- Preheat the oven at 185ºC / 365ºF.
- Line your baking sheet with parchment paper. I use the puff pastry parchment paper.
- Cut each piece of dough into eight triangles.
- Bake for 20 minutes or until pastry is puffed and golden brown.
- Meanwhile, star making the cream. In a heavy saucepan over medium heat, dissolve the sugar in the water. Allow cooling.
- With an electric or hand-beater, beat the yolks until they are thick and light yellow. Continuing to beat them, slowly pour in the sugar syrup.
- Return the egg and sugar mix to the saucepan, and stirring constantly, heat over low heat until thickened enough.
- Top each triangle with the egg cream.
