Ingredients
- 12 chicken drumsticks bone-in and skin-in
- 4 tbsp olive oil
- 1 tbsp sweet paprika
- 1/4 cup chicken broth
- Salt
- pepper
- 1 cup cherry tomatoes
- 2 carrots diced into 1 1/4-inch chunks
- 1 cup celery
- 1 medium zucchini
- potatoes peeled and diced into 3/4-inch cubes
- red pepper
- 1 tsp fresh thyme chopped
- 1 tsp fresh rosemary chopped

Instructions
- Preheat oven to 200°C / 400°F. Lightly grease a baking tray/sheet with cooking oil spray, or a light coating of oil. Set aside.
- Add chicken drumsticks and all the veggies to the sheet pan.
- Drizzle everything with olive oil, sprinkle with thyme, sweet paprika and rosemary. Then season with salt and pepper to taste and toss to coat.
- Roast in preheated oven 15 minutes. Then remove and toss.
- Return to oven and continue to roast until veggies are tender, about 15 minutes longer. Serve warm.
