Today I’m bringing you an easy, simple and quick recipe for greek yogurt cake with grated coconut. This cake is ready in less than one hour. This is a perfect cake for breakfast or for an afternoon snack. It´s also perfect for kids school lunch.

I like to make this recipe as the base for many other cakes. Then I add just a few more flavors: apple, coconut, cinnamon, chocolate, lemon, vanilla or so many others. This time I choose grated coconut.

The most amazing is that you don’t have to weigh all the ingredients, because you use the yogurt cup as a measure.

I think that this was my very first cake. The first time that I made it I was about 13 years old. It was a recipe given by my aunt Delphine. She used to make a yogurt cake covered with whipped cream and fresh strawberries… It was so delicious! I will never forget it.

  • 1 cup greek yogurt
  • 5 eggs largged
  • 2 cup sugar
  • 2 1/2 cup all-purpose flour
  • 1/3 cup oil
  • 1 tsp baking powder
  • 1/2 cup grated coconut

Instructions
  1. Preheat the oven at 160º/ 325ºF.
  2. Grease a classic bakeware – angel food cake pan by coating it with a thin layer of the butter. Sprinkle with some flour tapping out all the excess.
  3. Whisk together the yogurt, oil, sugar, and eggs.
  4. Add the flour, baking powder, and grated coconut into the liquids and stir just until no lumps remain.
  5. Pour the batter into the cake pan and bake for 35 minutes, covering with foil at the end if the top is browning.
  6. When a tester comes out clean, transfer the cake to a cooling rack and let it cool for 10 minutes before removing it from the pan.
