Today I’m bringing you an easy, simple and quick recipe for greek yogurt cake with grated coconut. This cake is ready in less than one hour. This is a perfect cake for breakfast or for an afternoon snack. It´s also perfect for kids school lunch.
I like to make this recipe as the base for many other cakes. Then I add just a few more flavors: apple, coconut, cinnamon, chocolate, lemon, vanilla or so many others. This time I choose grated coconut.
The most amazing is that you don’t have to weigh all the ingredients, because you use the yogurt cup as a measure.
I think that this was my very first cake. The first time that I made it I was about 13 years old. It was a recipe given by my aunt Delphine. She used to make a yogurt cake covered with whipped cream and fresh strawberries… It was so delicious! I will never forget it.

- Pour the batter into the cake pan and bake for 35 minutes, covering with foil at the end if the top is browning.
- When a tester comes out clean, transfer the cake to a cooling rack and let it cool for 10 minutes before removing it from the pan.
