The lemon poppy seed combo is a magical pair. I love my keto lemon poppyseeds muffins, but itā€™s a whole new game when you turn it into a dressing and pour it on top of all your favorite summer salads. This lemon poppyseed salad dressing creamy and sweet and comes together in about 5 minutes!

How long will this dressing last in the refrigerator?

I always try to use homemade dressings within 1 week because they donā€™t have all the chemicals and preservatives. But, within 2 weeks should be fine.

Ingredients for Keto Lemon Poppy Seed Dressing

  • Raw apple cider vinegar
  • Olive oil
  • Garlic cloves, minced
  • Powdered sweetener, (such as Swerve Confectioners)
  • Lemon juice
  • Dijon mustard
  • Sea salt
  • Poppy seeds
  • Water, optional

How to make Keto Lemon Poppy Seed Dressing

  1. Set the poppyseeds aside and place all the other ingredients in a high-speed blender.
  2. Blend on high for 30-40 seconds or until smooth and a light lemony color.
  3. Add in the poppy seeds and pulse the blender a few times to combine.
  4. Pour the dressing into an 8 oz jar and refrigerate for 3 hours or overnight to mix the flavors.
