Before I delve into the recipe, I must share a rather comical incident involving my dog and these cookies. The first time I made these irresistible treats, the aroma wafting through the house was too much for my furry friend to resist. While I briefly left the kitchen, my mischievous pup seized the opportunity and, in a blink of an eye, devoured the entire batch! Let’s just say, despite the disappointment of not being able to indulge in those first cookies, the incident provided us with a heartwarming memory and a reason to make them again – this time, with extra caution!

Ingredients to make these Red Velvet Cookies with White Chocolate Chunks

– 1 and 1/2 cups all-purpose flour
– 2 tablespoons  unsweetened cocoa powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 1/4 cup packed light brown sugar
– 1 large egg
– 1 and 1/2 teaspoons vanilla extract
– 2 tablespoons buttermilk or whole milk
– 1 tablespoon red food coloring (gel or liquid)
– 1 cup white chocolate chunks (or chocolate chips; I use both)

How to make the best Red Velvet Cookies with White Chocolate Chunks

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium-sized bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

3. In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy. This should take about 2-3 minutes.

4. Add the egg to the butter mixture and mix until well combined. Then, add the vanilla extract, buttermilk, and food coloring. Stir until the mixture is evenly colored.

5. Slowly incorporate the dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix at this stage. Once the dough has formed, fold in the white chocolate chunks.

6. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

7. Bake for 8-10 minutes, or until the edges are set but the centers are still slightly soft. Remember, cookies will continue to firm up as they cool. Do not overbake if you desire a soft and chewy texture.

8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
