I eat salad almost every day. Green salads are a welcome addition to any meal, and this arugula salad has quickly become a favorite in my house. Itās loaded with fresh vegetables, and savory cheese, all in a simple dressing. Arugula salad pairs perfectly with chicken, fish, beef and pork dishes.
Tomato Mozzarella Salad is perfect for a delicious lunch and it is a great fresh side to add to any dinner. Loaded with ripe juicy tomatoes, buttery fresh mozzarella, and some greens as arugula and lettuce, this salad comes together in a flash even with the lemon poppy seed homemade dressing!
Tough the tomato mozzarella salad only has three ingredients (plus the dressing), you will be amazed how much flavor there is in the salad. I want to make this salad more Nutri and I decided to add colorful veggies like arugula, red cabbage, and lettuce.
For this recipe, I used grape tomatoes. But what’s the difference between cherry and grape tomatoes?
A grape tomato is a class of tomatoes believed to be of southeast Asian origin, shaped similarly to the oval plum tomatoes but having the small size and sweetness of cherry tomatoes. Grape tomatoes arenāt as sweet as cherry tomatoes, and their flesh is meatier and less watery. Since grape tomatoes last longer than cherry tomatoes, theyāre becoming more and more popular.
I love to include every kind of tomatoes on my salads. It makes for quite a gorgeous side dish with little effort involved.

How do you make The Best Summer Salad
- Place the arugula, grape (or cherry) tomatoes, red cabbage, romaine lettuce, mini mozzarella cheese in a large bowl.
- Pour the dressing over salad and toss to coat. Sprinkle with parsley and serve.
Serve this delicious cucumber tomato onion salad with any grilled meats, baked salmon, chicken kabobs or even my favorite pork tenderloin.
The Best Salad Variations
You can add so many different ingredients to this salad to make it your own and customize the flavors.
Vegetables: You can try adding bell peppers, sliced olives, marinated artichokes, or avocado.
Protein: Make this a main course by adding cooked shrimp, chicken, bacon.
Herbs: Swap out the basil for green onions, dill or parsley.
Cheese: Use cubed provolone cheese or shaved parmesan.
