Ingredients to make Keto Taco Casserole
- Olive oil or avocado oil
- Onion, chopped
- Garlic
- Red pepper, finely chopped
- Ground beef
- Keto taco seasoning
- Tomatoes, chopped
- Egg
- Cheddar cheese, grated
- Olives (I used green because that’s what I have in my fridge. But feel free to use your favorite)
- Green Onions
How to make Keto Taco Seasoning
- Preheat oven to 350 degrees. In a skillet heated on medium-high heat, brown the ground beef with the red peppers, onions, and garlic.
- Once the beef is no longer pink, drain the excess oil using a strainer and return the beef mixture back to the pan. Stir in the taco seasoning.
- Transfer the beef mixture to a casserole dish and spread it out evenly.
- In a small bowl, combine the eggs and half of the shredded cheese. Stir the mixture until the eggs are lightly beaten. Next, pour the egg mixture evenly over the beef into the casserole dish. Mix the casserole a bit to ensure that the cheese gets in between the meat.
- Top the casserole evenly with the remaining cheese, and bake uncovered for 25 minutes, or until the cheese is melted and bubbly.
- Once the casserole is done, remove it from the oven and top with your favorite keto taco toppings like tomatoes, green onions. Serve immediately.
How to store Keto Taco Casserole?
If you have any leftovers of this keto taco casserole, just store it in a plastic container and put it in the fridge.
The casserole will stay good for a few days, if not up to a week. Any time you want to enjoy another helping, just put it in the microwave, heat it to the temperature of your liking, or reheat it in the oven for best results.
