These keto and low carb waffles with almond flour are completely healthy. They are so fluffy, easy and quick to make. Just perfect!
Since I bought this Waffle Maker, I tried so many different waffles recipes and finally, I get this fantastic almond flour waffles. I fell in love with them for the first time I tried it. Ā What makes these waffle so fabulous is that the almond milk used is warmed up. The reason I prefer to use warmed milk is that the melted butter would be more likely to harden and not to get evenly dispersed if the milk was cold.
One thing that makes this an easy and quick recipe is that I add all ingredients to a blender. But I have one more secret for you: in this recipe, I use sour cream: I think this gives the waffle a creamy but also fluffy texture.
These waffles are great for storing in the freezer and popping straight into the toaster oven.
They are perfect for your breakfast, but my kids just love to eat them as an afternoon lunch. Sometimes in my home, we eat them as a dessert. It goes very well with vanilla ice-cream, whipped cream, dark chocolate melted, honey, fruitā¦

- 1 large egg
- 1/2 cup almond flour
- 2 tbsp erythritol or any sweetener
- 1/4 tsp Sea Salt
- 2 tbsp almond butter
- 2 tbsp coconut oil to grease the waffle iron
- 1/2 cup unsweetened almond milk warmed up
- 50 ml sour cream
- 1/2 tbsp Vanilla Extract
- 1/4 cup coconut flour

- Preheat the waffle iron to high heat. Grease lightly (I usually coconut oil).
- Add all the ingredients to a blender and blend them on high speed for about 1 minute until all the ingredients get nice and smooth. If you don't have a blender, you can mix it manually in a small bowl on for a minute or two.
- Pour half the mixture (about 3/4 cup) onto the lightly greased waffle iron. Close and cook until steam stops coming out for about 3/4 minutes.
- Unplug and let cool slightly in the waffle iron to make the waffle easier to remove. It will crisp up as it goes from hot to warm.
- Repeat with the remaining batter.
