I´m always looking for healthy and nutritive recipes and this energy bites or energy balls (whatever you want to call them)  are packed with delicious, nutritious, protein filled ingredients with no cooking or baking! I made these Coconut Matcha Energy Balls because sometimes I need a sweet snack to get through my day. Plus, coconut and matcha are delicious.

  1. Microwave coconut oil at 10-second intervals, stirring between each one until melted.
  2. Blend everything together in a food processor. Process for 45–60 seconds at a time, scraping down the sides in between.
  3. Shape into 1″ balls. Store in the refrigerator.
