This is the reason I just love pannacotta deserts. We have so many options and it’s so easy and really quick to make. Panna cotta is a simple dessert for summer days but it is also great for a dinner party.
First time I saw this dessert was at a restaurant on a family lunch with my family. When I saw it I thought: “Uau! This is such an elegant and sophisticated dessert!”
I didn´t know pannacotta and so I decided to try it. I was so surprised with my first bite and scarfed the rest down, practically licking my plate clean. It was so, so fantastic. I’m smiling just thinking about it. Definitely, I added pannacotta to my list of favorites recipes
In the next weekend, for our family Sunday lunch, I made this pannacotta that I’m showing you today. Since then I’ve tried so many different pannacotta recipes. The truth is that I became a big big fan of pannacotta.

How to make a perfect Panna Cotta?
For this recipe, I used gelatine sheets, which is more uncommon in the US but I prefer this kind of gelatine because it dissolves easily.
To use gelatine, we first soak it over cold water and let it sit for a few minutes to soften.
In the meantime, we prepare our cream mixture by heating milk, heavy cream, sugar, and vanilla together in a saucepan until hot and the sugar is dissolved. Once hot, we add the softened gelatine and immediately whisk until smooth. Adding the gelatine to a hot mixture is what activates it.
The gelatine can’t be omitted from the recipe, because without it the pannacotta won’t set.
Panna cotta takes a minimum of 4 hours to set, but that depends on the size of your cups. If you use mini individual cups, it would set rather quickly.

  • 6 gelatine sheets
  • 100 ml milk
  • 80 g sugar
  • 600 ml Heavy Cream
  • 1 tsp Vanilla Extract
Raspberry Coulis
  • 1 cup frozen raspberries
  • 1/2 cup sugar
  • 1 tbsp water

  • 1/2 cup sugar
  • 1 tbsp water
Instructions
Panna Cotta
  1. Add the sheets of gelatine to a bowl of cold water and soak for few minutes.
  2. Pour the milk and cream into a saucepan with the sugar and vanilla extract. Stir to combine and bring to a simmer, then remove from the heat.
  3. Take the gelatine out of the cold water and squeeze out the excess, then add to the milk mixture. Stir until completely dissolved.
  4. Tip into four ramekins and place in the fridge to set for at least a couple of hours.
  5. To serve, turn each ramekin upside-down onto a serving plate. If the pannacotta won't drop out, carefully dip the ramekin in a bowl of warm water to loosen it. Serve with a drizzle of raspberry coulis.
Raspberry Coulis
  1. Place the raspberries in a jar of a blender; puree until smooth. Pass through a fine-mesh colander, and discard solids.
  2. Combine sugar, berries and the teaspoon of water in a saucepan. Bring to boil over medium heat.
  3. Reduce heat to medium-low. Cook until sugar dissolved, about 5 minutes.
  4. Remove from heat. Cool completely
